For three days the air is heavy with the glorious aroma of fresh grilled chicken and spices that locals prepare lovingly on a bed of hot coals.

In August, Olhos de Agua hosts its annual folklore festival and the Sardine Festival. The former sees indoor and outdoor performances by local choirs and dance groups, and the latter puts freshly cooked sardines on the centre stage.
